Learn to cook, preserve salmon in Sitka 'salmonganza'

A three-day “salmonganza” in Sitka will include workshops on preserving and cooking a variety of salmon dishes.

Salmon is an Alaska staple, and a series of ķƵ Cooperative Extension workshops in Sitka will focus on salmon nutrition and how to cook and preserve the tasty and nutritious fish.

Juneau-based agent Sarah Lewis will teach the classes, leading off July 30 at 1 p.m. with a hands-on workshop detailing how to pressure can salmon safely and how to make and can salmonberry syrup. The workshop will be held at Sitka Lutheran Church, 224 Lincoln St., and the cost is $35. All ingredients and supplies are included. Southeast tribal members and youth under 16 attending with an adult can take the course for free. 

On Monday, July 31, a free class from noon to 1 p.m. at Sitka Centennial Hall will discuss the healing benefits and uses of salmon, seeds and oils. The class will be in-person but led by instructor Audra Henderson via Zoom.

From 5-7 p.m. July 31, learn to cook creative family dishes with delicious and healthy canned salmon. The workshop will be at the Blatchley Middle School home ec room, and the cost is $20. All ingredients and supplies are included. Southeast tribal members and youth under 16 attending with an adult can take the course for free.

On Tuesday, Aug. 1, from noon-1 p.m., learn the basic techniques for smoking fish at home and how to pressure can smoked fish safely. The class is free and will be held at the Sitka Public Library.

From 5-7 p.m. Aug. 1, learn to pickle fish and dress it up with a few easy sauces. The workshop will be at the Blatchley Middle School home ec room, and the cost is $20. Southeast tribal members and youth under 16 attending with an adult can take the course for free.
